I wouldn't say that I am a ninja Mum. Far from it. I'm more like a shin-obi, a ninja in training. I see these Mums, with octo-arms, clean houses and hair done. Mothers that are one step ahead, at all times, of everyone. I look at these graceful and silently stoic women and I want to worship at their feet. I want to know of their ways- all of them. I want to high five them and give them a standing ovation accompanied by a high kick. Ninja Mothers around the world- I salute you. I want to be you. Really I do.
Life goals.
I felt like I had a little ninja Mum moment today. One of those moments where I had it going on. I baked. Before motherhood I was an avid baker. Today was the first time since my son was born that I donned an apron and got my beloved baking utensils out. And what's more I didn't follow a recipe- it was all me and my muffin pans. Heaven knows I've made enough muffins over the years to pull something together from my memory, baby brain and all.
For your own ninja moment follow this recipe bellow and give yourself a pat on the back from me.
Blueberry Muffins
2 1/2 cups of self raising flour, sifted
1 teaspoon baking powder
1 cup caster sugar
Splash of vanilla essence
1/2 cup coconut oil, melted
1/2 cup milk
1 egg
About 300g of blueberries (or berries of your choice)
Granulated sugar for sprinkling
Combine the flour, caster sugar and baking powder. Whisk the milk and egg in a small bowl. Pour egg mixture and coconut oil into dry ingredients and add the vanilla essence. Mix it all together. Add the berries. Place mixture into a 12 whole muffin tray lined with muffin liners. Bake in a moderate oven for 30 minutes or until cooked.
