Cornflake Cookies

I feel like the humble cornflake cookie often gets overlooked, probably because it doesn't have chocolate chips or macadamia nuts. But let me tell you something, cornflake cookies are good. So good. It's just that cornflakes and sultanas in a sugary cookie dough are probably one of the best combinations on the planet, and they should have a regular spot in your cookie jar. Bonus is that there is no egg in this recipe, so you and your cooking squad can lick the bowl as much as you like. Did you hear that pregnant mamas? I know you did.

Ingredients:
125g butter, chopped, at room temperature
2/3 cup caster sugar
1 teaspoon vanilla essence
1 1/4 cup self raising flour, sifted
1 tablespoon milk
1 1/2 cup cornflakes
1/2 cup sultanas

Method:
1. Preheat the oven to 180 C. Line two baking trays with non-stick paper.

2. Using electric beaters, cream the butter, sugar and vanilla essence in a mixing bowl until creamy. Add the flour and mix on low speed until just combined. Add the milk and mix until the dough comes together. Use a wooden spoon to mix in the cornflakes and sultanas. Stir until just combined.

3. Using 1 tablespoon on the mixture roll into balls and place on the baking trays. Flatten slightly with a spatula. Bake for 12-14 minutes until golden brown. Let them stand for 5 minutes on the ray before transferring them to a wire rack to completely cool down.
